The Da Silvano Cookbook Recipe for Fried Zucchini Blossoms - Fiori Di Zucca Fritti
2 eggs, separated
2 cups/225g all-purpose flour
1 cup/225ml light beer
Fine sea salt
Freshly ground black pepper
12 zucchini blossoms
1 cup/225ml vegetable oil
Step 1. Whip the egg white in a bowl until stiff peaks form
Step 2. In another bowl, whisk together the flour, milk, egg yolks, and beer. Fold the egg whites into the mixture. Add the beer last while stirring the other ingredients. Add salt and pepper to taste. Coat each blossom with this mixture and set aside.
Step 3. Warm oil in a pan wide and deep enough to hold half of the blossoms over high heat. When the oil is hot (not smoking), add half of the blossoms to the pan and fry them until golden all over. This will take about three minutes total cooking time.
Step 4. Use tongs or a slotted spoon to transfer the blossoms to paper towels to drain.
Step 5. If needed, add more oil to the pain and fry the remaining blossoms in the same manner. Serve hot.
