    Before Tequila, Everything was Mezcal

Mezcal, from Nahuatl “metl and ixcalli” means “oven cooked agave”’ it is the first true Mexican Distilled liquor made from the maguey plant also known as Agave.

Although Tequila sales and popularity are much bigger, Mezcal is the original Mexican Liquor. The main difference with Tequila is that Mezcal is smoked and tends to have many nuance flavors due to the ingredients and process during smoking. Another important distinction is that Tequila comes from primarily and exclusively two regions and must be made from Blue Agave only, whereas Mezcales are made and denominated from several different cultivated agaves, such as “manso” or “Espadin”, or wild agaves such as “arroquense”, “Tobala”, “Tobaciche”, “Do-ba-dan”, “duranguenses’ and many more. Most Mezcal is still produced in small quantities and has remained a family and artisanal process, thus the beauty of Mezcal, which varies greatly in flavor. During the smoking process, the hearts of the agaves or “piñas”, are cooked in underground pits, with several ingredients. Indeed this is the secret of Mezcal, the type of woods, fruits, herbs, and leaves will influence and create the flavor of the Mezcal. From strong to subtle smoky bouquet to hints of quince, apple, and cinnamon, wild flower, or just crisp and refined. These are good times for Mezcal. Every day more is being exported. We now carry nine-harvested “espadin” Mezcales such as Mezcal de Leyenda, Ilegal, Pierde Almas or Mano Negra. In addition we also have six amazing wild organic Mezcales from Pierde Almas, de Leyenda, and el Tinieblo. If you have not tried Mezcal I strongly recommend that you do so, it is delicious and the best way to drink it is to sip it straight. We hope to see you at Papatzul, please ask questions and perhaps try a flight of Mezcales! Salud y "para todo mal, mezcal, y para todo bien también" (for everything bad, mezcal, and for everything good, as well.) Los Paptzules
